Baba Ghanoush with Sweet Potato Fries

My favorite Baba Ghanoush recipe with Sweet Potato Fries ๐Ÿ˜‹

Baba Ghanoush:

1 medium eggplant

Sea salt

2 tbsp lemon juice

1 large clove garlic (grated or finely minced)

2 Tbsp tahini

2 Tbsp fresh cilantro, parsley or basil (optional // chopped)


-Preheat oven to high broil.

-Slice your eggplant into 1/4 inch rounds and sprinkle with sea salt and place in a colander in the sink to drain any excess liquid. After 10 minutes, rinse slightly and then pat dry between two towels.

-Arrange on a baking sheet

-Roast for 5-10 minutes, turning once or twice, until the eggplant is softened and golden brown.

-Set aside.

-Add garlic to food processor and pulse until minced.

-Once cooled, remove skin from eggplant and add flesh to food processor.

-Add the rest of the ingredients and mix until creamy.

Sweet Potato Fries:

1 Large Sweet Potato


-Preheat oven to 425ยฐF

-Peel sweet potato and cut into 1/2 inch slices

-Arrange on a baking sheet lined with parchment paper

-Cook in oven for 15 minutes then flip and cook another 15 minutes


Sweet potato fries are perfect for dipping into the baba ghanoush.
