Easy Lunch Bowl

Easy lunch bowl of cucumber, carrots, roasted potatoes, basil hummus and avocado on a bed of greens. ๐Ÿฅ—

Recipe:


Ingredients:

-2 handfuls of salad greens

-1 carrot, chopped

-1/2 cucumber sliced

-1/2 avocado, lightly sprinkled with sea salt and pepper

-2 scoops of basil hummus

-roasted potatoes


Roasted Potatoes Recipe:

Ingredients:

-3 small to medium potatoes

-2 cloves of garlic

-1 tbsp avocado oil

-1/2 tsp paprika

-1/2 tsp poultry seasoning

-1/4 tsp sea salt


-Preheat oven to to 400ยฐF


-peel and dice 3 potatoes

-mince 2 cloves of garlic

-toss it all in a tbsp avocado oil

-add sea salt, paprika, and poultry seasoning (or sub for spices/herbs of your choice)


-bake 15 minutes, flip, then bake another 15 minutes


Basil Hummus Recipe:

-1 can chickpeas

-2 cloves of garlic

-1/4 cup fresh basil

-2 tbsp tahini

-juice from 1/2 a lemon

-1/4 tsp paprika

-1/4 tsp cumin

-sea salt to taste

-a little water as needed


-add garlic cloves to a food process and process until finely minced

-add the rest of the ingredients except sea salt and water and blend in food processor until smooth

-add a little water if hummus is too thick add 1 tablespoon at a time

-add sea salt to taste


For salad bowl, line a bowl with salad greens and top with your other ingredients.
