Pineapple Turmeric Cupcakes
I was craving dessert and decided to make these pineapple turmeric cupcakes from @feastingonfruit
The texture was more dense than a regular cupcake but still tasty and made with healthy ingredients 😊
(these are not super sweet, so you may want to add 1/4-1/2 cup coconut sugar to the cupcake mix)
-1 cup crushed pineapple
-8 pitted dates
-1/2 cup coconut milk
-1 1/4 cup oat flour
-1 tbsp baking powder
-1/2 tsp turmeric powder
-cream from 1 can coconut cream or milk (chill can in fridge)
-1-2 tbsp maple syrup
-Preheat oven to 350°F
-In a blender, combine the pineapple, dates and coconut milk. Blend until well combined.
-Add oat flour, baking powder and turmeric. Blend briefly until just combined.
-Spoon into 6-7 muffin cups. Smooth the tops.
-Bake 25-30 minutes-until a toothpick comes out clean.
-Remove from oven and let cook completely
-To make frosting, whisk together the coconut cream and maple syrup
-Frost the cupcakes and sprinkle with shredded coconut.
