Southwestern Stuffed Baked Potatoes

One of my favorite dinner recipes:

Baked potatoes topped with black beans, cashew cheese, and pico ๐Ÿฅ”๐Ÿ˜‹

Potatoes are packed with vitamins, minerals, and antioxidants ๐Ÿ™Œ

This recipe is a healthy and delicious way to enjoy baked potatoes ๐Ÿ˜Š


-Wash/scrub potatoes

-Deeply poke each with a fork ~10 times

-Bake at 450ยฐF for 45 mins

Quick & Easy Black Beans:

1 can black beans

-Rinse with water

-Place in pot, cover with water

-Bring to boil, as they heat remove white foam

-Lower temp to simmer

-Add seasoning (start with smaller amounts and add more to your taste)

-1/2 to 1 tsp paprika

-1/4 to 1/2 tsp cumin

-1 tsp tomato paste

-1/4 tsp onion powder

-1/4 to 1/2 tsp garlic powder

- sea salt to taste

-Cover with tilted lid

-Let water cook down

Cashew Queso:

1 cup raw cashews

2 cloves garlic

2 tsp tomato paste

1/2 tsp chili powder

1/4 tsp paprika

1/4 tsp sea salt

1/2 - 3/4 cup water

Blend all ingredients and just the 1/2 cup water in food processor. Add a little more water as needed for a smoother queso.


-1/4 of a large red onion, chopped

-1/4 cup cilantro, chopped

-1/3 cup grape tomatoes, chopped

-juice of 1 lime

-black pepper

Mix onion, cilantro, and tomatoes. Add lime juice, sprinkle black pepper, stir.

Fill potatoes with black beans, then queso, and top with pico. Enjoy ๐Ÿ˜Š
