Southwestern Stuffed Baked Potatoes

Baked potatoes balanced with fiber, protein and healthy fat from black beans, cashew cheese, and pico de gallo.

Potatoes are packed with vitamins, minerals, and antioxidants.
This recipe is a healthy and delicious way to enjoy baked potatoes.
Recipe:
Baked Potatoes:
2-4 potatoes
-Wash/scrub potatoes
-Deeply poke each with a fork ~10 times
-Bake at 450°F for 45 mins
Quick & Flavorful Black Beans:
1 can black beans
-1/2 to 1 tsp paprika
-1/4 to 1/2 tsp cumin
-1 tsp tomato paste
-1/4 tsp onion powder
-1/4 to 1/2 tsp garlic powder
- sea salt to taste
-Rinse with water
-Place in pot, cover with water
-Bring to boil, as they heat remove white foam
-Lower temp to simmer
-Add seasoning (start with smaller amounts and add more to your taste)
-Cover with tilted lid
-Let water cook down
Cashew Queso:
1 cup raw cashews
2 cloves garlic
2 tsp tomato paste
1/2 tsp chili powder
1/4 tsp paprika
1/4 tsp sea salt
1/2 - 3/4 cup water
Blend all ingredients and just the 1/2 cup water in food processor. Add a little more water as needed for a smoother queso.
Pico:
-1/4 of a large red onion, chopped
-1/4 cup cilantro, chopped
-1/3 cup grape tomatoes, chopped
-juice of 1 lime
-black pepper
Mix onion, cilantro, and tomatoes. Add lime juice, sprinkle black pepper, stir.
Fill potatoes with black beans, then queso, and top with pico. Enjoy.
