Sticky Sesame Cauliflower with Greens

This recipe is healthy, satisfying and delicious 👌


The cauliflower gets baked and then dipped in a sticky sauce. I then used the leftover sauce as a salad dressing...so good 😋


Recipe:


-1 head cauliflower, chopped into florets

-1 1/3 cup cassava flour

-2 cups water

-1/2 tsp sea salt


Sauce:

-1/2 cup coconut aminos

-2 tbsp maple syrup

-2 tsp sesame oil

-2 tbsp lime juice

-1/2 tsp red pepper flakes

-1 tbsp tomato paste

-3 garlic cloves, minced

-1 tbsp grated ginger

-1 tbsp arrowroot powder

-1/2 cup water, more if needed

-sesame seeds for garnish

-chopped green onions for garnish


Salad:

-a bowl of mixed greens

-1/4 cup chopped cherry tomatoes

-handful of chopped cilantro for garnish (optional)


-Preheat oven to 425F

-Line a baking sheet with parchment paper

-In a large bowl whisk the cassava flour, water and sea salt until smooth

-Add the cauliflower and toss until well coated with the batter

-One by one, transfer the cauliflower to the baking sheet. Shake off excess batter and leave space between each piece on the baking sheet.

-Bake in oven 20-25 minutes until crisp. Flip halfway through.

-While baking, make sauce by adding the coconut aminos, maple syrup, sesame oil, lime juice, red pepper flakes, tomato paste, garlic, and ginger to a sauce pan.

-Cook on medium high heat, stir and bring to a simmer

-In a separate bowl, add the arrowroot flour and water and whisk

-Add this mixture to the sauce pan and stir often until the sauce thickens and becomes sticky. About 3-5 minutes.

-Add the baked cauliflower and coat with the sauce

-Remove cauliflower from pan, add to your salad, top with garnishes

-Use some of the remaining sauce as a salad dressing and serve :)
