Sweet Potato Blondies

These brownies are vegan and paleo friendly. They taste delicious and you'll feel good after eating them 😊


Recipe:


Ingredients

-1 1/2 cup baked and mashed sweet potato (I used 2 Hanna sweet potatoes)

-1/2 cup nut or seed butter (I used almond butter)

-2 tbsp maple syrup

-2 tbsp coconut flour

-1 tsp baking powder

-1 tsp vanilla extract

-1 tsp cinnamon

-Pinch of sea salt

-3–4 tbsp non-dairy milk

-chopped pecans as topping


Instructions

-Preheat the oven to 350F.

-Combine everything except the non-dairy milk in a blender or food processor (or mix by hand).

-Blend, adding the milk 1 tablespoon at a time until combined into a very thick batter. don’t add too much milk or they will turn out mushy

-Press into an 8x5" baking pan lined with parchment paper.

-Sprinkle on chopped nuts and press them in lightly

-Bake for 35 minutes at 350F

-Remove from the oven and allow to cool for at least 15 minutes before slicing and eating.
